Summer on a Stick
Nothing says Australian summer holiday quite like a mango and freshly peeled prawns. Tasked with supplying prawns for a New Year's Eve party on a boat, but not wanting to deal with the mess, I came up with this superbly simple recipe that tastes like summer on a stick.
INGREDIENTS
- 2-3 cooked prawns per person, peeled, deveined and butterflied
- ¼ mango per person, peeled, sliced into thin ribbons
- 6 mint leaves per person
- 4-6 toothpicks per person
TO DIP
- Doddles Creek chilli, lime & coriander mayonnaise
METHOD
Thread a prawn, mango and a mint leaf onto a toothpick. Place on a tray. Throw a small bowl in the middle with around a teaspoon of mayo per person to dip. Done, you excellent, resourceful human!
